I love Mexican food and am so lucky to have a wonderful little restaurant five minutes away from where I live. My favorite dinner combination is one fish taco and an al pastor tostada for the grand total of $5.50…I could buy this every week. But it’s Cinco de Mayo weekend and we will have some celebrating going on. I’ve narrowed down my list of home cooked Mexican dishes and I want to share it with you in case you are up in the air about what to prepare for your friends and family. Start off your meal with a delicious roasted tomatillo avocado salsa…so good with crisp tortilla chips and end up with a velvety coconut flan or a light and unusual tomatillo green apple sorbet. Great line up and I wish I could have a bite of each. That sorbet is so interesting. I’ve never seen anything like it. And I’ll be wishing for some this afternoon, it’s supposed to get to 86 degrees today …. that’s hot for this time of year in Denver.

That is quite a feast you have there! My tacos lean toward the very mild side, but I am in on the flan! No big celebrations here, but I do have the 12 striped plates all of blogland has, via $ Tree! Never had that Mexcan dinner party I was going to have when I bought them, lol!
