My daughter is having a garage sale this weekend and I volunteered to help her. In return she will help me with the one I am going to have the middle of July. We have learned the hard way that several people are necessary to keep tabs on things and help customers. Friday is always the busiest day with people lined up well before the garage door goes up at 9:00 am. I have several meal plans for busy days like this and one of my favorites is homemade pizza.
The next time you make your favorite pizza dough recipe make extra and freeze it in pizza size portions. If you take it out of the freezer and put it into the fridge the night before you want to bake it it will be ready to shape and top for dinner the next day. My local grocery store carries a good fresh pizza dough and I often buy several bags of dough for the freezer. I make up little zip lock bags of Canadian bacon, crumbled bacon, diced ham, pepperoni, etc… chopped vegetables; green pepper, red onion, olives, peppers, artichoke hearts, whatever…and grated cheeses…plus little containers of sauce. If I remember to take a selection of whatever sounds good out of the freezer in the morning and put it into the fridge everything will be ready to assemble when I get home. On today’s pizza I used sauce, mozzarella, crisp bacon, Canadian bacon, red onion, tomato and black olive. This isn’t much of a post…it’s the idea I wanted to share. You will be amazed how quickly a delicious meal can be put together if you have the ingredients at hand. Who doesn’t love homemade pizza!

Good luck with the garage sale. I should have one, but I have had the donation truck here every week for the last 4! Garage sales are a lot of work, and I would be on my own, dh wants no part of it, lol!

Just this week, I looked for bags of pizza dough at my Giant Eagle store…no luck. They used to offer them. I think this is a great idea to have all the ingredients ready to go & it would be a nice way to use up those sm. portions of leftover veggies or meat, too.

I have some homemade pizza dough in the freezer right now this looks like a great way to use it. I like your idea of having different ingredients in bags to choose from and put together however you want. Hope your garage sale goes well!

I always have pizza dough in my freezer for quick dinners! (I must admit it’s never homemade). This pizza looks so yummy.

I have a question. I make pizza dough once a week and I love my recipe but… I make enough for four individual pizzas then enough for a large focaccia the next night. That half stays in the fridge overnight. But the second day sometimes the bread I make with the refrigerated dough (brought to room temp before shaping a baking) is beautiful and sometimes not so good. Any idea why and do you have this mixed experience when you freeze yours? Thanks!!

Hi Jamie – Hmmmm, don’t know why your dough isn’t the same every time. It can be temperamental for sure. Pizza dough is the only dough I freeze and I haven’t noticed that freezing affects it. I’ve never been a great bread baker and have several recipes that I stick with. King Arthur Flour has a great hot line for questions like that. I turn to them all the time for help with my baking. It’s sad that you do have to keep a big eye on things. My sister came and brought some of her jewelry to mine. A couple of pieces ended up missing.
