I love a good casserole. I don’t indulge very often, but when I’m looking for comfort food with lots of flavor that’s the section of my recipe file I go to. Kate, at A Spoonful of Thyme, posted this recipe a few weeks ago and I knew I had made something remotely similar years ago that I really enjoyed so decided to give her recipe a go. Let me tell you, I was not disappointed. The ingredients are simple and compliment each other perfectly. I thought I would miss the spices that I usually put in my meat sauce, but this recipe is delicious just as it is and I won’t do a thing differently the next time I make it. I served this casserole with a wedge of iceberg lettuce just the way Kate did. Mmm, mmm good. Thanks, Kate, this is a keeper.
- 8 ounces wide egg noodles
- 2 tablespoons butter
- 1-1/2 pound ground chuck
- 2 8-ounce cans tomato sauce
- 8 ounces cream cheese
- 8 ounces cottage cheese
- ¼ cup sour cream
- ⅓ cup chopped green onion
- Salt and pepper to taste
- Cook noodles and drain.
- Cook meat, discard any liquid. Add tomato sauce and remove from heat.
- Combine the cream cheese, cottage cheese, sour cream, green onion and seasonings in a bowl.
- Butter a small casserole dish. Place a layer of noodles across the bottom of the dish. Distribute half of the cheese mixture over the noodles in small spoonfuls. Spread half of the meat mixture over the cheeses. Repeat the layers, ending up with meat mixture.
- Top with a small amount of grated cheddar cheese if desired. Bake at 375 degrees for 30-40 minutes. Serves 6.
Cathy, your casserole looks delicious. A more simple version of lasagna. The type of meal I could make even after working all day. Thank you for sharing this recipe.

I'm thumbing through all your posts that I've missed while I've been gone, and I see that you've been busy, busy making yummy yummy yummy goodies like that bacon pie and the colcanon and don't even get me started on those mexican tortas! A dear friend of mine contributed this recipe to a church cookbook project– I have been making it for a long time! You don’t have to tell me how good it is– its a proven favorite in our family. My friend was a little closer in age to Martha Washington than I am but not by much!!!
