
- 2/3 cup butter
- 1 cup sugar
- 1 egg
- 1 tablespoon lemon peel, finely grated
- 1 tablespoon lemon juice
- 2 cups AP flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup pecans, finely chopped
Shape dough into rolls 2 inches across. Roll in remaining chopped nuts. Wrap rolls in waxed paper or plastic wrap and chill well, several hours or overnight. Slice dough into 1/4 inch slices and bake on parchment lined cookie sheets at 350 degrees for 12-15 minutes or until slightly browned. Makes 5 dozen cookies.
The rolls of dough keep in the refrigerator for up to a week and they freeze beautifully. I double the recipe and always have this cookie on hand for a quick dessert.

I remember my mother making something like that when I was little. Ice box cookies were all the rage.
My mother loved to make 'ice box' cookies too. She loved hickory nuts and black walnuts but used many pecans also. She would bring huge bags of pecans back from winter trips driving through Georgia.
This sounds like a very special and delicious recipe.

My Mom would always make ice box cookies too..I have to say yours look REALLY good! Just box up the leftovers (as if there are any) and mail them off!!!

Why have I never thought to do this? I love how they look, too. My daughters take their lunches to school 99% of the time!
I think when it's cold outside, we start daydreaming of spring, and what better flavor than lemon! I just made a lemon pund cake tonight and do you think I remembered to take a picture of it before we cut into it? Heck no, I was busy pouring a big glass of cold milk for me and my Mr.! The cookies look great, another must try recipe of yours!

Hmm..looks good. Great thing about it is I don't have to pipe it out or roll them before cutting into shapes. Freeze, cut and bake….easy peasy:D

It's funny that I stumbled across this recipe on your blog. I've been searching for this recipe since Christmas of 2006 when I sampled them on a cookie platter a co-worker brought to work. I'm thrilled to have found it here!
