I am jazzed!!!! I haven’t made pizza in many moons but when I read Pam’s post about Greek pizza on her blog, For the Love of Cooking, I just had to try my hand at it again.
Pam used Trader Joe’s pizza dough, which I thought was an excellent idea, but we don’t have a store in my town and my local grocery doesn’t carry it so I made my own. I’m not a big bread baker so wanted something easy and turned to a recipe I’ve had in my file for ages for pizza dough made in a food processor. I made it in minutes and the results were OK. The recipe needs some tweaking but definitely has possibilities. I am encouraged by how quick, easy and inexpensive the dough is to make. I rolled out the crust as thin as I could because I like it crispy. No pizza dough twirling here.
- 2 to 2-1/4 cups flour
- ¼ ounce package fast acting yeast
- ½ teaspoon sugar
- 2 tablespoons olive oil
- ½ teaspoon salt
- In a food processor combine ¾ cup of the flour, yeast and sugar. With the motor running add ⅔ cup warm water (130 degrees F). Turn the motor off. Add the oil, 1-1/4 cups of the remaining flour and the salt and process the mixture until it forms a ball, adding more water, 1 teaspoon at a time, if it is too dry, or more flour, 1 tablespoon at a time, if it is too wet. Knead the dough by processing it for 15 seconds.
- The dough may be used immediately, but I let mine rest for about 30 minutes till double in bulk. Punch down dough, roll out and top with your favorite toppings.
I was inspired by Pam’s Greek choices so I topped my crust with:

Tomato Sauce

Mozzarella Cheese

Thinly sliced red onion

Sliced Roma tomatoes

Kalamata olives, sliced
-
Feta Cheese
-
Chopped fresh oregano
-
Artichoke hearts (Pam’s suggestion but I didn’t have any)

That is one fine looking pizza. Great choice on the ingredients! We love Greek flavors in pasta, pizza, salad, sandwiches. Yum! I just may have to have me one of these this weekend…
