I love a good burger. My usual choice is a quality ground beef patty, grilled to medium, and topped with an array of garnishes that can sometimes defy explanation. But sometimes I go in another direction and make my burger sandwich with just veggies or seafood that is in season.
I had a lovely piece of salmon that wasn’t enough to feed my family so decided on salmon patties, burger sized, instead. If you would like my favorite recipe for salmon prepared this way, click here. The patties were plump, moist, and really showed off the versatility and full flavor of the salmon. I dressed up the burgers with lettuce, tomato and some good, homemade tartar sauce. A toasted kaiser roll made them extra special. Coleslaw and chips round out the meal.

Beautiful! Salmon croquettes were one thing my mom cooked that I loved and I’ll bet a million bucks that yours are even better! I love the idea of having them on a bun instead of a hamburger.
